小龙虾10斤
南山香水鱼调料一包
花椒一把
干辣椒一把
料酒两勺
葱姜蒜适量
盐两勺
生抽两勺
芹菜两根
土豆两个
洋葱一个
仔姜一大块
香菜一根
鸡精适量
白芝麻适量
麻辣小龙虾(简易版)的做法
菜市场挑选好食材,一定要选青虾,肉质鲜嫩,请卖虾大婶去除虾头和虾线,只留虾尾,我个人觉得只喜欢虾尾,拿回家用清水反复清洗,为了保持新鲜度,最好是买回家就开始做

热锅倒入菜油,油多放点儿

倒入虾尾炒至变色,再炒个三分钟左右

按顺序放入姜蒜葱仔姜,待油温下降之后放入香水鱼调料、花椒、干辣椒段翻炒(如果油温过高会把花椒和干辣椒段炒焦,一股苦味儿)

接着放入洋葱和芹菜继续翻炒

倒入生抽,料酒

倒入炒好的虾尾继煮翻炒几分钟,把虾尾炒熟透,(如果觉得油放少了,或者担心虾尾没熟透,这步也可以加入适量啤酒闷烧五分钟左右)
